This meal is a delicious marriage of some of my all-time favorite foods. I've been making some version of this dish for the last few years and it has continued to evolve and change. The awesome thing about it is that you can really use whatever you have on hand. Leftover rice? Fry it up in coconut oil and toss it in there! A random selection of veggies from the garden? Sure, why not? I often add mushrooms, peppers, sausage or beans, depending on what needs to be eaten in the fridge and what I'm craving. It was one of the first meals I made for Justin when we began courting and, the way he tells it, it definitely caught his attention. It continues to be a staple in our kitchen and is always satisfying and delicious.
The basic version we make the most often these days is really simple. Yams sliced thinly and sauteed with onions, garlic, kale and curry paste (Thai & True makes amazing curry pastes!). Top it all off with a fried egg , avocado slices and soy sauce and you have a surprisingly quick, unique and yummy dish.
